Moroccan Peanut Couscous with Peas

Ingredients

15ml1 tbsp Vegetable Oil

125ml½ cup chopped onions

125ml½ cup chopped red pepper

3 cloves garlic, minced

375ml1 ½ cups chicken stock

2ml½ tsp ground cumin

125ml½ cup Adams® 100% Natural Creamy Peanut Butter

250ml1 cup couscous

250ml1 cup frozen peas

30ml2 tbsp chopped cilantro

1 green onion, thinly sliced

Directions

  1 Heat oil in medium saucepan over medium heat.

  2 Add onion, pepper and garlic. Cook until transluscent. Add the broth and cumin and bring to a boil.

  3 Whisk in the peanut butter. Blend well.

  4 Stir in couscous and return to the boil, stirring constantly.

  5 Remove from heat and let sit covered, about 5 minutes or until liquid is absorbed.

  6 Fluff with fork and stir in peas, cilantro and green onions.

  7 Cover and let sit another 5 minutes or until peas are thawed. Serve.

Tip(s)

This is an excellent side dish served warm or cold.
